Rubbed Salmon With Tomatoes and Basil

- 2 (822.13 g) can diced tomatoes, drained
- 29.57 ml dried basil
- 29.58 ml balsamic vinegar
- 14.79 ml minced garlic
- 9.85 ml salt, divided
- 2.46 ml black pepper, divided
- 680.38 g salmon, cut into fillets
- 4.92 ml cumin
- 4.92 ml olive oil
directions
- Combine tomatoes, basil, vinegar, 1 t. salt, 1/4 t. pepper and garlic in a bowl, set aside.
- Combine cumin, remaining salt and pepper to make a rub. Rub into salmon fillets.
- Heat oil over medium-high heat in skillet. Cook fish, skin side up for about 4 minutes, then turn, add tomato mixture to pan and cook for an additional 1-2 minutes.

<p>I am a full-time working mother as well as a part-time college student. I love to cook, but obviously, I don't have a great deal of time to spend in the kitchen.
