  • Preheat oven to 425 degrees.
  • Place beans, oil, almonds, sage, salt and pepper in a baking dish and toss to combine.
  • Top with butter and roast for 15 minutes until the beans are tender and golden.
  • Place roasted beans in a bowl and pour the butter mixture over to serve.

  1. This was a really good side. I didn't have sage leaves, so I used a tsp of ground sage & it still worked really well. Definitely a repeat!
     
  2. The ingredients and some reviewers comments confused me. MarraMamba says to use 1# butter beans; whereas reviewers used canned beans. So, I compromised and used a 1# bag of frozen butter beans and cooked them according to directions. These were much more firm than the canned ones, which I was afraid would disintegrate while roasting? Anyway, the resulting side was very, very tasty indeed! Thanks!
     
  3. I made 3 servings of this recipe but used a whole drained and rinsed (15oz) can of butter beans. I don't normally like "lima" beans but I love sage so decided to try this. We all LOVED it! There wasn't any butter sauce but these ended up like roasted potatoes which we were very happy about because we can't have potatoes on the South Beach Diet. These will be our new potato substitution! Yay! The smell of fresh and roasting sage also makes your house smell very nice. Thanks for this HEALTHY KEEPER recipe. Made for Photo Tag.
     
  4. First, I have to say....I love butter beans. So I knew I'd like this. I used fresh butterbeans, and cooked them the day before I made this recipe.....of course I enjoyed some of those just the way I always cook them. :) I used speckled butter beans, not lima beans as some used. I did used ground sage since I didn't have a sage leaf, and they turned out delicious. Thanks for sharing a new way to enjoy butter beans.

  1. This is great, I used a large can of lima beans also known as butter beans, and added in an onion and some fresh garlic to the beans when roasting, I used 3 teaspoons dried oregano in place of the fresh sage, used lots of fresh ground black pepper and a little salt, thanks Marra!...Kitten :)

I have chronic medication resistant depression after 10 years on anti depressants that worked well but would stop working after a year or two, so now do my best at home living on disabilty. Not a bad thing, many have far worse health issues but i have been able to concentrate on food/cooking. My main passions are my cats. I live in the woods and somehow many starving strays or "dumps" have found the message babies who passed on left in the woods saying "suck lives at xxxx road. Most arrive sick and/or starving. Right now i have 2 that arrived with feline herpes and their attendant 2ndry bacterial infections but are doing beautifully. One old man who was going to be euthanized bc a lady who found him as a stray was moving and didnt want him...well he was a biter and rather grumpy who was in ICU for 3 days with a deadly gut infection which was fixed but he left with a diagnosis of diabetes. 3 months on insulin and finally diet controlled and he caught the herpes virus, respiratory symptom version and turned into a cuddler. Butterscotch must think "why didnt i figure out this cuddle stuff was great before i got sick!" Doing wonderfully even though he has bouts. he and the other kids are my babies. Sadly Butterscotch died of Lymphatic cancer in winter of 2008. A year before Big Boy arrived in my life, starving and weak. Full of affection he jumped into my arms and stayed, turns out he has FIV (cat hiv) so he needs to be watched closely.
