Rise and Shine Healthy Breakfast Cookies

"These are relatively healthy for a cookie...not too sweet and with some extra fiber they make a nice breakfast treat. They are best eaten fresh and hot out of the oven but still taste good the next day. Craisins or raisins can be added for variety."

  • Preheat oven to 350 degrees. Stir together flour, baking soda, salt, cinnamon and nutmeg. Set aside.
  • In a large bowl combine brown sugar, egg and vegetable oil. Stir until well combined. Stir in flour mixture, oats and wheat germ (or flax seed).
  • Drop by tablespoonfuls on baking sheet. Flatten slightly with glass (not too much if you like the centers a little soft). Bake for 8-10 minutes or until lightly browned.

  1. I make these all the time. It's a healthy treat for my kids. The only thing is I add a bit of water or extra oil(about a tbsp) as I find them a bit dry.
     
  2. I made this recipe without the flax/wheat germ, with 100% whole wheat flour. and the additional T of oil suggested by a different reviewer. The result wasn't a batter-more like a crumble--probably drier than that! I figured at that point that I didn't have anything to lose-so I added water until it resembled a batter, made cookies and baked them a while. The result was descent--but it's not something I would serve company. However, they were polished off by lunch (we're a family of six).
     
  3. These can easily become addicting. After the first one, I had to eat 2 more!! The downside is that they were too dry and hard to roll into a ball to drop on cookie sheet. I guess it needs a little more fluid, as jennythecook said in her review. I used the bottom of a glass to flatten them out. Made for PAC Spring 2011.
     
  4. These are the best and we enjoy them for breakfast. I would like to try using applesauce in place of some of the oil and will report the results when I do. Also, I would recommend cutting back on the salt, especially if you are using sea salt.

I remember my mom let me bake cookies by myself for the first time when I was five. I was hooked from that time. I love to bake and cook. Trying new recipes is especially fun for me. I usually try at least two-three per week. Of course, I have a lot of favorites that we have over and over again too. One thing that I've really gotten into recently is trying to lighten up some of my favorite recipes. Homemade pizza is one of my specialties. My husband thinks my pancakes are the best.
