- 1 cup ricotta cheese
- 2⁄3 cup milk
- 3 eggs, separated
- 4 cups flour
- 1 teaspoon baking powder
directions
- In a small bowl, separate egg whites and beat until they form a peak.
- In another bowl, blend the rest of the ingredients.
- Fold in egg whites.
- Cook on a hot, oiled griddle or pan.
- Flip when pancake forms bubbles.
- Roll up like crepes and serve with butter and maple syrup.
