Rich Chocolate Pudding Surprise

"I love good chocolate and don't usually like chocolate pudding because it falls short of the real thing. This is easy to make and turns plain old chocolate pudding into a chocolate lover's treat. The key is to use good cocoa (Hershey's is fine) and good chocolate (splurge on the expensive stuff here -- you don't use much). Kids and grownups will like this pudding and the whole recipe is cheaper than buying that pre made stuff."

  • 12 cup good quality cocoa
  • 4 tablespoons cornstarch
  • 34 cup sugar (more if you like it sweeter)
  • 4 cups whole milk
  • 1 egg
  • 1 tablespoon butter
  • 1 teaspoon vanilla (can substitute espresso)
  • 3 12 ounces good chocolate (i recommend Droste extra dark pastilles)

  • Mix the cocoa, corn starch and sugar together in a heavy sauce pan.
  • Add about a half cup of the milk and mix together till it forms a smooth paste (this step makes the pudding less likely to be lumpy).
  • Add the rest of the milk, mix completely, and put it on a medium flame.
  • While the pudding mixture is heating, beat the egg separately.
  • Continuously stir the pudding mixture on the fire
  • It will start to thicken after a few minutes depending on the heat. Keep stirring. Lower the heat if you find that the bottom is getting sludgey while the top stays liquid.
  • Spoon some of the hot mixture into the beaten egg and whisk together then add that lot back to the pan (this step will keep the egg from scrambling in your pudding).
  • Stir until the pudding is the desired thickness.
  • Turn off the heat and stir in the vanilla or espresso and the butter.
  • spoon into individual serving dishes and sink a piece of the chocolate into the center. (I use Droste extra dark chocolate pastilles).
  • Serve warm.

I love to cook and have little time to do it. Weekends we make a date of it, hanging out in the kitchen. I cook and my husband plays the guitar. My children love to help out. My seven-year-old son is learning all about herbs in the garden and how to separate eggs, and my 11-year-old daughter is "flying solo" in the kitchen.
