Sweet and Tangy
- 1⁄4 cup red wine (any variety)
- 1⁄3 cup balsamic vinegar
- 1 teaspoon Dijon mustard
- 2 teaspoons fruit jam or 2 teaspoons jelly
- 1⁄2 cup vegetable oil
- Combine all ingredients in a jar and shake until all blended and smooth. Serve over greens.
A lovely French Cote du Rhone worked quite well in this salad dressing as did the apricot jam and aged balsamic. I have added this recipe to my menu rotation and this cookbook: Book #82435! Delicious on a simple tossed salad consisting of baby spinach, carrots, cucumbers, celery, dried cranberries and corn kernels. Thank you!
