A lovely French Cote du Rhone worked quite well in this salad dressing as did the apricot jam and aged balsamic. I have added this recipe to my menu rotation and this cookbook: Book #82435! Delicious on a simple tossed salad consisting of baby spinach, carrots, cucumbers, celery, dried cranberries and corn kernels. Thank you!

Ingredients Nutrition

  • 14 cup red wine (any variety)
  • 13 cup balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 2 teaspoons fruit jam or 2 teaspoons jelly
  • 12 cup vegetable oil


  1. Combine all ingredients in a jar and shake until all blended and smooth. Serve over greens.
