Quick Chicken and Shells With Fresh Mozzarella Cubes

- 1⁄2 cup fresh mozzarella cheese, cut into small cubes
- 1⁄4 cup fresh parsley, chopped
- 2 tablespoons fresh basil, chopped
- 1⁄4 cup parmesan cheese, fresh grated
- 2 cups chicken, shredded
- 2 cups whole wheat pasta, your favorite shape
- 1⁄2 cup grape tomatoes, cut in half
- 1⁄4 cup zucchini, cut into bite sized pieces
- 2 tablespoons extra virgin olive oil
- salt
- pepper
directions
- Cook pasta according to package directions minus 2 minutes and drain, reserving 1 cup of the pasta water.
- In a deep saute pan, melt olive oil over medium heat. Add zucchini and tomatoes. Cook 4-5 minutes. Add chicken, pasta, pasta water, and parmesan cheese. Cook for another 2-3 minutes. Remove from heat and add herbs and mozzarella cheese.
- Season to your liking. Serve and enjoy!
