Quick Chicken and Shells With Fresh Mozzarella Cubes

"This is a perfect dish for those week-night dinners where you want to get something quick and healthy on the table in under 30 minutes. When first made it I was pretty much cleaning out my pantry and allowing my son to pick out garden ingredients."

  • Cook pasta according to package directions minus 2 minutes and drain, reserving 1 cup of the pasta water.
  • In a deep saute pan, melt olive oil over medium heat. Add zucchini and tomatoes. Cook 4-5 minutes. Add chicken, pasta, pasta water, and parmesan cheese. Cook for another 2-3 minutes. Remove from heat and add herbs and mozzarella cheese.
  • Season to your liking. Serve and enjoy!
