Quick Chicken and Shells With Fresh Mozzarella Cubes

This is a perfect dish for those week-night dinners where you want to get something quick and healthy on the table in under 30 minutes. When first made it I was pretty much cleaning out my pantry and allowing my son to pick out garden ingredients.

• Cook Time: 20 mins

Ingredients:

Servings: 4

• ½ cup fresh mozzarella cheese , cut into small cubes
• ¼ cup fresh parsley , chopped
• 2 tablespoons fresh basil , chopped
• ¼ cup parmesan cheese , fresh grated
• 2 cups chicken , shredded
• 2 cups whole wheat pasta , your favorite shape
• ½ cup grape tomatoes , cut in half
• ¼ cup zucchini , cut into bite sized pieces
• 2 tablespoons extra virgin olive oil
• salt
• pepper

Directions:

1. Cook pasta according to package directions minus 2 minutes and drain, reserving 1 cup of the pasta water.
2. In a deep saute pan, melt olive oil over medium heat. Add zucchini and tomatoes. Cook 4-5 minutes. Add chicken, pasta, pasta water, and parmesan cheese. Cook for another 2-3 minutes. Remove from heat and add herbs and mozzarella cheese.
3. Season to your liking. Serve and enjoy!
