- 1 cup all-purpose flour, plus
- 2 tablespoons all-purpose flour
- 2 tablespoons brown sugar
- 1 teaspoon ground cinnamon
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon baking powder
- 1⁄4 teaspoon baking soda
- 2 eggs
- 1 cup milk
- 1⁄2 cup canned pumpkin
- 2 tablespoons butter, melted

Orange Walnut Butter
- 1⁄2 cup butter, softened
- 1⁄4 cup chopped walnuts
- 1 tablespoon grated orange peel
- maple syrup
directions
- In large bowl, combine the first six ingredients.
- In another bowl, combine the eggs, milk, pumpkin and butter; stir into dry ingredients just until combined.
- Bake in a preheated waffle iron according to manufacturer's directions until golden brown.
- Meanwhile, for orange walnut butter, in a small bowl, combine the butter, walnuts and orange peel until blended.
- Serve waffles with butter mixture and maple syrup.

Super-easy, wonderful-tasting waffles that were delightfully fluffy. The recipe made exactly four waffles in my iron, and each one was heavenly. The orange butter was good, but I think the waffles themselves have such great flavor that even plain butter would be fine on them. We didn't bother with the maple syrup (I just don't use it on my waffles, and my roomie wanted the flavor of the waffles to not get "hidden"). I love pumpkin, and will absolutely be making these again. Thanks for sharing!

ENJOYED EVERYTHING ABOUT THESE WAFFLES, the east of prep, the pumpkin flavor, the orange butter ~ OUTSTANDING! I did change one thing, however, using, as I did, corn syrup instead of the maple kind, which I thought let those other flavors come out nicely! Thanks for a great breakfast!
