- 1⁄2 teaspoon cinnamon
- 1⁄8 teaspoon ginger
- 1⁄2 teaspoon clove
- 1⁄4 teaspoon baking soda
- 3⁄4 cup cooked pumpkin (canned stuff)
- 1 1⁄4 cups cold milk
- 1 (120 g) package butterscotch pudding mix
- 1 1⁄4 cups whipped cream
directions
- Combine spices and baking soda in bowl.
- Mix in pumpkin and blend well.
- Add milk and pudding.
- Beat for one minute.
- Fold 1/2 cup of the whipped cream into the mixture.
- Garnish with rest of the whipped cream.

This is really really good! Used sugar-free, fat-free butterscotch pudding, which I made according to the box. I mixed the spices, soda, and pumpkin, then I added the pudding. I'm kind of curious about what the soda does for this recipe. I suppose it has something to do with neutralizing acidity. Anyway, it was delicious, so I wouldn't want to leave anything out!

This is an excellent pumpkin pudding. I didn't realize that the recipe called for a large box of butterscotch pudding when I visited the store, but thankfully picked up 2 of the smaller boxes. It worked perfectly. This is a great fall dessert, and I think it would even be good prepared with low/non-fat items.
