There are lots of recipes for baked oatmeal with pumpkin in them, but not this much pumpkin! It's fairly moist, dense and chewy, mildly sweet, and very filling.

  1. Mix the oatmeal, baking powder, spices, and salt in a large mixing bowl.
  2. Add the remaining ingredients and stir until mixed.
  3. Pour into a greased 9x13" baking pan.
  4. Bake at 350 for about 30 minutes, or until firm all the way through. (Even when fully cooked it will still stick to your knife when you cut it.).
