I've given this a four star review, even though my own was a disaster. I can't get good pumpkin here so used butternut squash. I think it was too wet. Also, I didn't use enough oil and so they didn't cook through, although they were cooked on the outside. However, the taste was really good and deserves four stars. I'm going to make them again.

  1. Combine pumpkin and egg, stir in flour, cinnamon, baking powder, sugar, salt and juice.
  2. Heat oil in a shallow pan and drop spoonfuls of the mixture into the oil, fry till golden then turn and do other side, drain on paper towels and serve hot sprinkled with cinnamon sugar.
  3. Lovely with ice cream!
