- 1 pie shell, premade
- 1 cup low fat cottage cheese
- 4 ounces neufchatel cheese
- 1⁄2 cup sugar
- 1⁄2 cup canned pumpkin puree
- 3 tablespoons flour
- 1 teaspoon vanilla
- 1 teaspoon pumpkin pie spice
- 2 eggs
directions
- Preheat oven to 325°F
- Puree ingredients, except eggs, until smooth. Pour into a large bowl. Slightly beat eggs and gently fold into mixture. Pour mixture into pie crust and bake 50 minutes or until center is firm.
