Prawn and Mango Salad

"I love prawns not the tiny silly ones though, I like the huge monster extra special ones juicy succulent and buttery. Om om om! However as they are a super speed food on slimming world I saw this recipe in Asda magazine march 2010 and need to update it. I lurve mangos, I reckon 4 syns on slimming world"

  • 1 red chili (deseeded and chopped)
  • 2 tablespoons lime juice
  • 1 tablespoon clear honey
  • 450 g king prawns (pre cooked)
  • 300 g mangoes (2 medium peeled and diced)
  • 150 g mixed salad greens
  • 1 pointed sweet red pepper (deseeded and sliced)
  • 200 g cucumbers (sliced)
  • 4 spring onions (trimmed and sliced)

  • Whizz chilli, lime juice, honey on blender to make dressing. Season and mix with half of the prawns cover and chill for 20minutes.
  • Make salad by tossing all other ingredients in a bowl adding the prawns and dressing on the top.
