Haven't tried this yet, but it sounds so delicious and simple to make. You can increase amounts of ingredients as needed.

Directions

  1. Boil potatoes, cool and peel, then slice 1/4" thick.
  2. Spread in a shallow dish and salt and pepper to taste.
  3. Top with onion and sliced tomatoes to cover.
  4. Drizzle with lemon juice and olive oil.
