- 10 lbs potatoes
- 1⁄2 gallon heavy whipping cream
- 1 gallon whole milk
- 1 lb bacon
- 1⁄4 cup bacon grease
- 2 1⁄2 cups dried onion, minced
- 1 lb butter
- 1⁄8 cup salt
- 1⁄8 cup pepper
directions
- Wash and peel potatoes.
- Cook bacon until completely crispy.
- Drain bacon, and keep 1/4 cup bacon grease.
- Cut potatoes into quarters.
- Crush bacon into small pieces.
- Combine all ingredients in a large stock pot.
- Heat over medium heat until the soup comes to a boil stirring frequently. Lower heat to low and continue to simmer until the potatoes are soft stirring regularly.
