Potato Encrusted Halibut With Roasted Onions and Fennel

- 4 frozen halibut steaks, thawed (approximately 8-ounce each)
- 29.58 ml mayonnaise, aioli (light mayo works fine)
- 236.59 ml hash brown, frozen, thawed
- sea salt & freshly ground black pepper, to taste
- 44.37 ml extra virgin olive oil
- 29.58 ml balsamic vinegar
- 2 onions, peeled and quartered
- 2 small fennel bulbs, trimmed and quartered
directions
- Preheat oven to 400°F.
- Whisk together oil and vinegar and season with salt and pepper. Toss in vegetables and place around the edges of a parchment-lined roasting pan.
- Roast 10–15 minutes while preparing the fish.
- Place each fish steak on a work surface and spread oneside with about 1/2 tablespoon mayonnaise. Press about 1/4 cup hash brown onto the fish to form a top layer. Repeat with each steak.
- Remove roasting pan with vegetables from oven.
- Season fish with salt and pepper and add to the center of the roasting pan with the vegetables.
- Return pan to oven and cook 10–12 minutes or until fish is opaque and flaky and top is golden brown.

<p>I live in Northern California in the town of Placerville. It's a one hour drive East to Lake Tahoe or one hour West to our State Capitol, Sacramento. Great location. <br /> I have been overdue for an update!!! 1/10 <br /> My Boy's are doing well. Nick is still in Australia and Jon is still here at home. They both graduated high school last year. I hope NIck will come to the US for college, Cal Poly, San Luis Obispo!!! (we'll see) He may stay down under for college :( <br />Jon is working and figuring out life....he plans on being an entrepreneur im sure. <br />We have two dogs, Jewel and Bob both adopted from the local shelter.
