Potato Candy

"Both of my grandmothers and my mother always made this at Christmas. It's a must have here at our house."

• Ingredients: 5
• Yields: 3 dozen

ingredients

• 1 medium potato, boiled and mashed (no salt)
• 2 tablespoons butter
• 1⁄4 lb sweetened flaked coconut
• 1 teaspoon vanilla extract
• 1 lb powdered sugar

directions

1. Combine all ingredients in a large bowl.
2. Roll into logs and wrap in wax paper.
3. Store in refrigerator.
4. Cut in slices to serve.

I have been making this recipe for years, It is so yummy. I sometimes substitute the vanilla extract for other flavor extracts such as mint, orange, hazelnut, rum....... For Easter I roll the mixture into little balls and roll them in melted chocolate, then refrigerate them so the chocolate hardens, the kids LOVE them.

This candy was a little too sweet for me. The mixture itself was a little thin after I mixed it all up so there was no rolling in wax paper (could be because I mixed it with a hand mixer rather than by hand). I left it in the bowl for a few hours and put it in the fridge to harden then roll in wax paper. I put some festive sprinkles on since DS loves them. Made for 123 Hits.
