I had this at a church meal. I love vinegar and potatoes together so I really enjoyed it.
- 2 lbs red potatoes
- 3 sprigs fresh parsley
- 3 -4 fresh bay leaves
- 1⁄4 cup extra virgin olive oil
- 1⁄2 cup red wine vinegar
- Cube and boil potatoes until tender.
- Dice herbs and add to cooled potatoes.
- Combine olive oil and vinegar, pour over potatoes and herbs and stir to coat.
- Season with salt to taste.
