  • Dredge pork in flour. In a hot skillet, brown meat in butter-oil combination.
  • Stir in sherry, water, onion, garlic, pepper, salt, herbs.
  • Cover and cook slowly 30 minutes, adding a little water if needed.
  • Add mushrooms and cook, covered 15 minutes longer.
  • (This recipe can also be used with veal, but reduce cooking time significantly.).

  1. I followed this recipe and tweaked it from an old recipe i remembered and it turned out awesome. I didn't use water at all, i used all dry sherry and upped the garlic to 2 whole cloves. Not bland at all and makes for a boozy scallopini. I also made it with veal once. Just as good!
     
  2. This is an easy, basic recipe, and well written. We felt it was a bit bland, though. Perhaps replacing the water with more sherry, or subbing marsala, Calvados or brandy for the sherry would help. The sherry was not a strong enough flavor. A good recipe to experiment with though. Made for Fall 2011 PAC game.
