Marinated pork loin kebabs with shallots, capsicums and tomatoes.

  1. Add the diced tomatoes, onion, garlic, ginger, basil, olive oil and seasoning to a blender and blend until smooth.
  2. Pour the marinade over the pork in a bowl and mix thoroughly ensuring that the pork is well coated.
  3. Cover and refrigerate for at least 2 hours.
  4. Soak about 8 or 9 wooden skewers in water for about 15 minutes then thread on the pork, capsicum, shallots, and tomatoes.
  5. Grill for around 8 minutes each side and serve with flour tortilla wraps and BBQ sauce.
