Pomegranate & Celery

"This is an easy but elegant appetizer or use on a relish tray. The ruby arils look so pretty on top of the celery.These three ingredients go very well together! I came up with tonight to serve as a side with our soup."

  • Score 1 fresh pomegranate and place in a bowl of water.
  • Break open the pomegranate underwater to free the arils, drain.
  • Wash, trim, dry, cut the celery into four pieces each and set aside.
  • Fill each piece of celery with cheese.
  • Divide the arils evenly and press onto the cheese.
  • Serve right away or refrigerate for 1 hour.
