Pomegranate & Celery

- 1⁄2 cup pomegranate arils
- 6 large celery ribs
- 4 ounces fat free cream cheese, softened
directions
- Score 1 fresh pomegranate and place in a bowl of water.
- Break open the pomegranate underwater to free the arils, drain.
- Wash, trim, dry, cut the celery into four pieces each and set aside.
- Fill each piece of celery with cheese.
- Divide the arils evenly and press onto the cheese.
- Serve right away or refrigerate for 1 hour.

Made a tray full of these little beauties & they were gone in no time, devoured pre-dinner at my recent Yuletide party! I was generous with the pomegranate, & everyone loved them (along with the chocolate bacon that I'd made ~ go figure)! Will certainly keep this recipe around!
