Plum Pudding Porridge

"This is another great way to use up the leftovers from Christmas, in this case the Christmas Plum Pudding. I came up with this recipe while staying at my Aunt and Uncle's home in Dublin, Ireland. The measurements for this are just a guess, so do what you think is best in terms of your own personal tastes and what you like. For instance, if you think honey might be too sweet, maybe add a little dash of sugar instead."

  • In a microwave safe bowl, add the oats and salt.
  • Add the honey and milk. Crumble in as much plum pudding as you like and mix.
  • Put in the microwave for 2 1/2 minutes to 3 minutes depending on your microwaves wattage. Make sure to stir every 1 minute to check on the consistency.
  • Serve with a dash of cold milk or cream.
