Pink Coconut Candy

I got this recipe from my mother. When I was in grade school, we used to make these every Christmas as gifts for my teachers--they're a great project for kids to help with. Pink with strawberry flavoring is traditional, but you can experiment with other flavors and colors too. Yield is estimated.

Good candy! I used pink gel food coloring and put the mix in a ziplock and piped it out onto parchment paper. I could never get them to harden up. I stuck them in the fridge for a couple hours after leaving them on the counter for 5 hours and they're still soft...but they taste great! Thanks for posting!   1. Mix everything together.
  2. Drop by spoonfuls onto waxed paper and let sit for four hours or until set.
