Pineapple Freeze

  • Pour pineapple and its juice into an 8 inch square baking pan. Freeze 2 hours or overnight.
  • Position knife blade in a food processor bowl; spoon frozen mixture into processor bowl; Process mixture until smooth and slushy.
  • Pour mixture into 4 individual dessert dishes. Spoon 2 tsp liqueur over each portion.
  • Serve immediately.

  1. A simple and tasty concoction, but watch out for "brain freeze" if eating it too fast!?? I placed frozen fresh pineapple chunks, a 6 fl. oz. can of pineapple juice, and about a third of a cup of water in a Vitamix blender, but the resulting slurry was so thick that it overcame the blender! ?? I had to clear it several times using a table knife, only to get just a little further the next time. The recipe can easily benefit from double the Amaretto amount, too. Like 4 tsp, rather than 2 tsp. I'm giving this three stars because of the blending challenge and adjustments necessary.

Retired world traveler. I have collected recipes from many of the places I have been. Not the recipes from the local 5 star restaraunts but the cuisine that the REAL people eat! Lots of interesting stuff out there people eat! Love to try out those recipes I have collected now that I have the time.
