Pickle and Ring Bologna Sandwich Spread

"This is a great old favorite, my mom made it for us as kids, her mom made for her kids, on and on it's so quick and tasty you will be addicted. all you need is pickled ring bologna, dill pickles, and some mayo. If the pickled ring bologna is to overpowering for you, you should use regular ring bologna, both ways come out great."

  • Using a grinder, grind up and your bologna and all your pickles in a bowl.
  • next add about 5 tablespoons of light mayo , or more to your taste, and mix well.
  • finally enjoy on your favorite bread, or stuff in pita pockets for quick and easy snacks.

  1. My dad, who was a child during the depression, said that his mom made this all the time. Every time we would go out fishing, Dad would pack these sandwiches in his lunch box for us to eat. I hadn't had this in over 30 years. I made it today for my daughters and they loved it. Now I'm thinking of ways to improve it. Maybe some low-fat Cheddar Cheese ground up too, and possibly toasting the bread (those sandwiches in our little boat floating along the river in Michigan got pretty soggy!
     
  2. Like everyone else, I had this often as a teenager. We never used pickled bologna, just regular. I have also made this with chicken bologna. It is so good served on fresh, homemade buns. Great recipe!
     
  3. Made half the recipe with garlic ring bologna and Vlasic baby dills and served in pita pockets as suggested. Just like my mom used to make, yum! This must be a standard Michigan recipe :lol: Thanks for sharing Dan. Made for Pick A Chef Spring 2011.

  5. This is the recipe for my grandmothers ground bologna except I use sweet pickle relish....my family loves this stuff and I make it often....
