Perfect to Beat the Summer Heat - Colourful Orange Salad

"This is G.V.K. Durga Ravi's recipe from the Thursday magazine. She's an avid reader of the magazine just like me and I'm so pleased to share her recipe here. Enjoy! Note: Cook time is refrigerating time."

• Serves: 2

ingredients

• 4 oranges, washed,peel removed and de-seeded
• 8 tender fresh spinach leaves, washed and chopped
• 2 grated fresh carrots
• 29.58 ml plain honey
• 2.46 ml grated ginger
• 14.79 ml olive oil
• 4.92 ml sesame seeds
• 0.25 ml sugar

directions

1. Put the olive oil, sugar, honey, sesame seeds and ginger in a bowl.
2. Mix well.
3. This is the dressing for the salad.
4. Put the oranges, grated carrots and chopped spinach leaves in another bowl.
5. Mix well.
6. This is the salad.
7. Add the dressing to the salad.
8. Mix well.
9. Refrigerate for atleast 2 hours.
10. Serve chilled.

Very nice salad although it is VERY sweet with 2 tbsp of honey particularly as the honey in these parts is quite strong tasting. Next time I would use 1/2-1 Tbsp of honey. The dressing thanks to all of that honey is a sticky gluggy mess when you first make it but it does combine with the orange juice from the oranges so you just have to make sure that you mix it well. We ate this with a dish that had some caraway in it and the combination was actually quite nice. certainly easy to make and both kids ate well [age 14 months and 4 years] which was a bonus!
