Peppery Garlic Chops

- 4 boneless center cut pork chops (1 1/2 inch-thick)
- 2 garlic cloves, crushed
- 2 tablespoons fresh coarse ground black pepper
- 4 tablespoons Worcestershire sauce
- 3 -4 tablespoons olive oil, plus about
- 1 tablespoon olive oil, for your skillet
directions
- Combine all ingredients in a large self-sealing plastic bag. (large enough to hold chops). Marinate chops in the garlic pepper mixture for about 30 minutes.
- Heat cast iron skillet (or heavy skillet with enough olive oil to just coat the pan.
- Remove pork from the marinade and place into skillet. Cook for about 20 to 30 minutes, until the pork is fully cooked and the outsides are browned.
- Baste with marinade during cooking, if desired.

I made the mistake of thinking I could just cook the chops for half of the time on each side. So they came out a little burned on one side after the first 10 minutes! Next time I will turn and turn and turn during the cooking process. I had a lot of marinade and juices in the pan, so I threw in some chopped onions and it made a nice sauce to top the chops. It was a bit too peppery for my likings, but my roommate (who doesn't like spicy food) loved it.
