'pecan Butter' Cookies

- 7 ounces pecan halves (1 3/4c)
- 1⁄2 cup butter
- 1⁄2 cup brown sugar
- 1⁄2 cup sugar
- 1 egg
- 1 teaspoon vanilla
- 1 1⁄2 cups flour
- 1⁄4 teaspoon baking soda
- 1⁄2 teaspoon baking powder
- 1 ounce pecan halves
directions
- 1) Preheat Oven to 350 degrees and toast the pecans for 8~11min until toasted. Cool Slightly.
- 2) In a food processor process toasted almonds for 2~3min until it form pecan butter. It will start out as really fine crumbs, then not do much, then the pecan crumbs will pull itself into a ball, then turn into peanut butter like texture. THAT is Pecan Butter, THAT is heaven.
- 3) Cream butter, both sugars, and pecan butter until light and fluffy.
- 4) Add in the egg and vanilla and beat until combined.
- 5) Combine the flour, baking soda, and baking powder in a separate bowl.
- 6) Mix in the flour into the creamed butter until just combined.
- 7) Chill 1 hr.
- 8) Roll chilled dough into 1inch balls and place on a cool cookie sheet. Press one pecan half into each ball.
- 9) Bake cookies for 8 to 10 minutes, then let cool on sheet for 1 minutes before moving off of sheet to fully cool.
