Peas tossed in butter with fresh mint
- Add the butter to a pan with a drop of water (approx 2-3 tbsp) and throw in a little chicken stock. Dissolve the mixture on a high heat to create an emulsion (a liquid dispersed in another liquid). Once dissolved, add the peas and reduce for 1-2 minutes. This will help to concentrate the liquid and the flavour.
- Just before serving, add the fresh herbs and serve.
