Peanut, Orange, and Carrot Salad

"Got this recipe out of Rachel Raye's magazine two summers ago. It's become a great favorite. Don't skimp on the fresh ginger!"

  • In a medium microwave-able bowl, microwave the peanut butter for about 10 seconds to soften. Whisk in the tamari, orange juice and ginger; stir in a splash of hot water if the sauce begins to tighten up.
  • Stir the carrots into the dressing and toss.
  • Scatter the scallions and peanuts on the salad; season to taste with salt and pepper.
  • Best if allowed to chill in the refrigerator for a bit.

  1. I cut this recipe in half since there were only 3 of us & we all much enjoyed this great combo, especially the peanuts & carrots ~ GREAT TASTING SALAD! I only came to cooking in my 50s, when we moved home to a tiny town with only a few restaurants. I'm always on the hunt for easy, flavorful recipes (often ethnic cuisines), and I'm always ready to try something new and different! In cold weather I gravitate to stews, soups, and casseroles of the not-too-heavy kind; in hot weather I love a salad or cold soup. Partly because of my husband's diabetes (I'm borderline) and partly out of indolence, baking is not my thing.
