Peanut Butter Chow Mein Cookies

The easiest of my great-grandmother's traditional Christmas cookies, fondly recalled by the family as the "Shoebox Cookies," to make. I see that there are several variations on the recipe up, but not her version, so here it is.

  1. Melt chips and peanut butter in pan.
  2. Add chow mein noodles and marshmallows.
  3. Stir thoroughly on low heat.
  4. Drop by spoonfuls on wax paper.
  5. Cookies will harden quickly, so move fast!

I increased the ingredient amounts by half, and instead of making drop cookies, I poured the whole thing into foil-lined, 7" x 11" pan that I coated with cooking spray. I then put the pan into the freezer for about 2hrs to firm up. I removed the pan, peeled off the foil & cut the "cookies" into 1" squares. ( I just didn't have the patience to fuss with dropping them from spoons). These are a very sweet treat, so just a small piece works.

These are wonderful! Made as directed, only next time, I will switch from using a tablespoon to a teaspoon when dropping them because they are such sweet morsels! Thanks, StarryNews! Made for Spring 2010 PAC.

These were super easy; it's has been a long time since I made these particular cookies, and I'd forgotten how easy they are! DS and DH gobbled them up! I made as directed and dropped by tablespoons onto wax paper. My yield was 16, but they may have been a bit to big...Thanks so much for sharing, Starry!
