This is a very light and refresing salad - makes a pretty presentation, too. I make in the spring -especially around Easter.
- 2 (3 ounce) packages peach Jell-O
- 1 1⁄2 cups boiling water
- 1 pint vanilla ice cream
- 1 (15 ounce) can peaches, drained
- 8 ounces Cool Whip Topping
- Dissolve jello in boiling water.
- Add ice cream and mix well, until almost completely dissolved.
- Refridgerate- when partially set, fold in whipped topping and peaches.
