This is a great recipe and quick as well. Can be used as a dessert or for breakfast or a snack. Found this on mealsforyou.com.
- 1 1⁄2 lbs peaches, sliced, thawed if frozen
- 2 cups lemon low fat yogurt
- 1⁄2 teaspoon vanilla extract
- 4 shortbread cookies
- Combine peaches, yogurt and vanilla in a bowl, then place in individual serving dishes.
- Place cookies on serving platter or around the dishes.
