Easy to make low-fat dish. I'm on weight watchers and I find this delicious and terrifically filling.

  1. Preheat the oven to 200°C Spoon the olive oil into a roasting pan and add all the vegetables, tossing to coat.
  2. Sprinkle the vegetables with cumin seeds (if using).
  3. Place two sage or basil leaves on top of each chicken breast, then season with salt and pepper.
  4. Wrap a slice of Parma ham around each chicken breast.
  5. Arrange the chicken breasts on top of the vegetables. Roast for 30-35 minutes, or until the chicken is cooked and the vegetables are tender. Serve.
