"A lovely, cool fruit cocktail from the Southern chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947."

ingredients

• 2 cups papayas, cut in balls
• mint sprig

• Lemon French Dressing

• 1⁄4 cup lemon juice (fresh is best)
• 1⁄4 cup lime juice (fresh is best)
• 1⁄2 teaspoon dry mustard
• 1 teaspoon salt
• 1⁄2 teaspoon paprika
• 3⁄4 cup sugar
• 2 cups salad oil

directions

1. Place papaya balls in cocktail glasses.
2. Garnish with a sprig of mint.
3. Serve with dressing.
