Orzo with Brown Butter and Parsley

Bon Appetit taught me how to cook. This is one of their simpler recipes that makes a nice side dish.

Directions

  1. In a large heavy saucepan, bring broth to a boil.
  2. Add orzo and cook until broth has been absorbed, about 15 minutes, stirring often.
  3. Remove from heat.
  4. In a medium skillet, melt butter, stirring until golden, about 4 minutes.
  5. Remove from heat.
  6. Add garlic and nutmeg.
  7. Pour over orzo.
  8. Add parsley and toss to combine.
  9. Season with salt and pepper to taste.

I used 8 cups of stock and it was just right! This is rich with the butter and the parsley gives it a refreshing almost citrus taste. A nice balance of flavors! And very easy to make! Thanks.
