Craig Claiborne. The stronger the honey you are using the more pronounced the flavor on this recipe.its a very thick batter , i used 1/2 cup honey and 1/2 cup applesauce and came out fine .

- 1⁄2 teaspoon baking soda
- 3⁄4 cup orange juice
- 3⁄4 cup walnuts, chopped
- Preheat oven to 325°.
- Cream shortening; add honey, orange rind and egg.
- Sift dry ingredients and add to creamed mixture.
- Add orange juice and nuts.
- Bake 70 minutes.
I thought it would have been sweeter with the honey but it was still a good bread. I didn't have any orange rind so had to leave that out. It was a little on the dry side...maybe I cooked it took long. Made for Zaar 1-2-3 Hits Tag Game 2011.
this is a lovely tea bread, but it was not as sweet as i expected, definitely had more of an orange flavor. i used freshly squeezed orange juice and a locally bottled honey. this was good served with butter and jam.
The taste was really good but your instructions do not mention what size pan to bake this cake in so I baked it in a 9 x 5-inch loaf pan. This is a very moist cake with lovely honey flavor. Thanks Dienia!..Kitten:)
