  • 1 sweet onion, sliced
  • 59.14 ml oleo, melted
  • 1 large egg, lightly beaten
  • 78.78 ml milk
  • 248.05 g can cream-style corn
  • 0.13 ml hot sauce
  • 2 (340.19 g) package corn muffin mix
  • 226.79 g carton sour cream
  • 1.23 ml salt
  • 236.59 ml fiesta blend cheese, divided

directions

  • Saute onion in oleo in large skillet over med. heat until tender. Set aside.
  • Combine egg and next 3 ingredients; add the corn muffin mix and stir just until moistened.
  • Pour into a greased 8-inch square pan; set aside.
  • Combine onion mixture, sour cream and 1/2 the cheese; spread evenly over the batter.
  • Bake at 350°F for 25 minutes; sprinkle with remaining cheese and bake 5 minutes more.
