Makes an anytime healthy side dish !
- 1 bunch spinach, chopped (PREF BABY SPINACH)
- 1 big onion, chopped
- 1 big tomatoes, chopped
- black pepper
- 1 tablespoon oil
- Heat oil and add salt, black pepper powder, onion, tomato and spinach in that order one by one.
- Saute on medium heat for 8 minutes.
- Serve warm as a wonderful side dish.
I enjoyed this very much! So simple and fresh, and very quick, too. I added about four sliced mushrooms, because I had them left from another dish I had made. It is colorful, too, so I posted a photo. Hope you like it!
To turn this into an outstanding recipe, start by frying 5 finely sliced cloves of garlic, then add the other ingredients as set out in the recipe. You might also wish to add some coriander, or as you Yanks call it, some cilantro. Yummmmmmy either way, either on pasta or just as a side dish. Omit the garlic and the coriander and it's a great breakfast dish. And healthy too !!
