Old Fashioned Evaporated Milk Caramels

ingredients
- 2 cups white sugar
- 2 cups white Karo
- 1⁄2 cup butter
- 2 cups evaporated milk
- 1 teaspoon vanilla
- 1 cup pecans, chopped
- 1⁄4 teaspoon salt
directions
- Boil sugar,salt and corn syrup to 245 degrees.
- Stir occasionally.
- Add butter and evaporated milk so gradually that the mixture does not stop boiling.
- STIR CONSTANTLY!
- Cook rapidly to 240 degrees, being careful not to scorch.
- Add vanilla and nuts.
- Pour into greased pan.
- Cool before cutting.
- Cut with heavy,sharp knife with saw-life motion.

I live in Omaha NE and am an audiologist at Boys Town National Research Hospital. I love to cook, as does my husband Michael. In the summer, we have a large garden and try to use alot of fresh fruits/veggies in our cooking. We have a 5 year old daughter, Kate and almost 2 year old son Sam and enjoy introducing them to new foods. One of their favorites is fresh pesto smeared on crackers!
