- 1 1⁄2 lbs ground beef
- 1 lb jimmy dean hot sausage
- 1⁄2 cup onion, chopped fine
- 2 lbs Velveeta cheese
- 2 (8 ounce) cans Rotel Tomatoes
directions
- Brown meat, sausage and onion.
- Drain.
- In large crock pot, combine cubed Velveeta, Rotel tomatoes and meat.
- Cook on high for 1-2 hours or until melted.
- Put on low to serve.
- Stir occasionally while melting and while serving.
- Serve with tortilla chips or Fritos.

We always have the ingredients on hand, not only for holidays, but whenever an impromtu party arises. I saute my onions in a couple of tbls of butter before adding to the mix, occasionally I add about a cup of shredded cheddar and a smidge of cream or milk to smooth the flavors when we feel a little bit like splurging. My DBIL tried to eat it as a soup during the holiday. You can also cut down on cook time by using microwave but it isn't as good. This is a can't miss dip!
