- 1 kg large green prawns, peeled
- 4 tablespoons olive oil
- 4 garlic cloves
- 1 teaspoon chili flakes
- 2 tablespoons smoked paprika
- 4 tablespoons dry sherry
- 1⁄3 cup Italian parsley, chopped
- 2 teaspoons white sugar
- salt
directions
- Combine oil, grlic, chilli and paprika in large fry pan.
- Heat on high until garlic colours.
- Add prawns. Cook for 2 minutes until starting to turn pink.
- Add sherry, parsley and sugar. Cook for 1 minute more until prawns are cooked through.
- Remove from heat and salt to taste.
