- 2 cups buttermilk
- 1⁄4 cup orange juice
- 2⁄3 cup quick-cooking rolled oats
- 1 egg
- 2 tablespoons light brown sugar, packed
- 1⁄2 cup all-purpose flour
- 1⁄2 cup whole wheat flour
- 1 1⁄2 teaspoons baking soda
- 1⁄2 teaspoon salt
- 2 tablespoons butter, melted
directions
- The night before you plan to serve the waffles, combine the buttermilk, orange juice and oats in a medium bowl.
- Mix well, cover, and refrigerate over night.
- In a large bowl, whisk the egg.
- Add the sugar and mix.
- Add the flours, baking soda, salt and the oat mixture and mix well.
- Stir in the melted butter. The batter will be slightly lumpy.
- Preheat and lightly grease a waffle iron.
- Spoon a generous 1/2 cup of batter onto the hot iron and close the lid.
- Cook until no more steam escapes from the iron and the waffle is golden on both sides, about 5 minutes.
- Serve immediately with butter and maple syrup.

These are fantastic! By far the lightest, fluffiest whole grain waffles I've made--and trust me, I've been trying to find a decent recipe my family would take over white flour waffles for ages. Usually whole grain waffles are so dense and heavy, but somehow these were soft and light. The flavors are perfect. The only change I made was canola oil in place of butter. I'm going to add orange zest as well as juice next time to punch up the orange flavor. My husband didn't even realize they were whole grain, he thought I just added oatmeal and orange for kicks. This is my go-to recipe from now on, and I'm going to pass it on to my friends as well. Thanks for the awesome recipe!
