ingredients
- 1 cup butter
- 1 cup sugar
- 4 egg yolks
- 3 - 3 1⁄2 cups flour
- 1 lemon, zest of, grated
- 1 teaspoon vanilla
- 1 teaspoon baking powder
- 1 pint jam
directions
- Cream butter and sugar. Preheat oven to 350°F.
- Stir in yolks one at a time then add lemon peel and vanilla; stir to combine.
- Next add 3 cups flour and the baking powder and stir well. If needed, add 1/2 cup flour to stiffen dough.
- Press all-except 1 cup-of dough into a cookie sheet and spread with your choice of jam. We've traditionally used raspberry, strawberry or plum.
- Roll out remaining cup of dough on a floured surface and cut into strip's. Lay strip's in a criss-cross pattern on top of jam.
- Bake for 30 minutes or until golden.

Why "SoupCookie"?
My cousin Ryan use to come to my house after school sometimes and was *always* hungry! So he used to make his version of chocolate chip cookies and I can't remember what he did or didn't do right but the cookies never failed to come out flat and doughy and gooey. We'd put them in a bowl with milk and eat it with a spoon.....sooooo good!
To this very day his recipe has not been deciphered ;)
