"My Noni (grandma) has made this every christmas since I can remember. It's now my turn to make and share this recipe which has been passed down from my great-noni. I hope you enjoy these as much as I do :)"

  • Cream butter and sugar. Preheat oven to 350°F.
  • Stir in yolks one at a time then add lemon peel and vanilla; stir to combine.
  • Next add 3 cups flour and the baking powder and stir well. If needed, add 1/2 cup flour to stiffen dough.
  • Press all-except 1 cup-of dough into a cookie sheet and spread with your choice of jam. We've traditionally used raspberry, strawberry or plum.
  • Roll out remaining cup of dough on a floured surface and cut into strip's. Lay strip's in a criss-cross pattern on top of jam.
  • Bake for 30 minutes or until golden.

  1. So Yum! I didn't have any lemons on hand so I skipped the zest. I used my homemade plum jam and served it warm, dusted with icing sugar. Thank you very much for a lovely recipe I will make again :)

Why "SoupCookie"? My cousin Ryan use to come to my house after school sometimes and was *always* hungry! So he used to make his version of chocolate chip cookies and I can't remember what he did or didn't do right but the cookies never failed to come out flat and doughy and gooey. We'd put them in a bowl with milk and eat it with a spoon.....sooooo good!
