Noella's Chicken 'chest' Salad

"A friend I bowled with just refused to call this' Breast of Chicken Salad'!!! So in her honor, here is this recipe that our bowling teams enjoyed. I'm sure everyone of us makes this a little different, as Noella never gave us the measurements."

  • Cut the chicken 'chests' into about a 1/2" dice.
  • Add all ingredients to a mixing bowl and add salt and pepper to taste.
  • The amount of mayonnaise is a guess.
  • Note: I really like the 'McCormick Mayonesa' found in the Mexican foods at the grocery store. It has lime juice added, which I like to use in most of my salad recipes.

  1. Very nice chicken salad! I used 1 tablespoon of minced onion, 1/2 teaspoon of celery salt, 1 tablespoon of dried cilantro, and 1/4 teaspoon of pepper, I am sure that fresh cilantro would be a lot better than dried but that is what I had on hand. Our picture was taken at Bryce Canyon NP when we celebrated our 47th anniversary. (It has now been 54 years!!) <br> <br>Of course, I love to cook and bake. Desserts seem to be my specialty, however my husband & I like Mexican, Southwest, Greek, and Italian cuisine alot. Healthy food(soy milk, tofu etc.), alot of raw vegetables and made from scratch comprise much of our diet. I have always had problems cooking fish, tho we do like to eat fish. We are both retired. <br> <br>I love Labrador Retreivers and have owned, trained and shown several very nice ones! <br> <br>My husband and I are both natives of Colorado, however somehow we ended up living in St. George Utah, in the South west corner, near Zion, Bryce, & Grand Canyon National Parks, which we enjoy alot. Before the price of gasoline took a jump, I volunteered at Zion NP. <br> <br>We celebrated our 53th wedding anniversary in the summer of 2008.
