Posted in response to request for a low fat muffin. These turn out moist and yummy...good enough to eat just because you like them!

Directions

  1. Mix all ingredients.
  2. Spray muffin tins with Pam.
  3. Divide equally.
  4. Bake at 350F for 25 minutes.

These never cooked all the way through for me. They had a nice, almost spicy taste, but the texture never set. Perhaps there needs to be more flour? Dh ate them all, but we agreed that something needs to be done about the texture. There is great potential with the lovely flavor of apple and carrot, though.
