No Carb or Low Carb Gluten Free Spinach Bread

ingredients
- 1 tablespoon margarine or 1 tablespoon butter
- 3 (10 ounce) frozen spinach, thawed and drained
- 12 large eggs, beaten
- 1⁄8 teaspoon black pepper
- 1⁄2 cup feta cheese (optional)
- 1⁄2 cup mozzarella cheese, balls (optional)
- 1⁄2 cup parmesan cheese (optional)
- 4 garlic cloves, chopped
directions
- preheat oven to 350.
- grease the loaf pan liberaly with the butter.
- squeeze the water out of the spinach.
- Chop the spinach to about half the size it comes.
- mix all the ingredients and pour into a loaf pan.
- bake about an hour and 15 minutes until a knife insearted in the center comes out dry.
- let cool and slice as desired.
- Keep refrigerated.

I always barbecued and camp cooked but now that I am retired and my wife is disabled I do almost all the cooking. My preference is for recipes that are fairly simple with over the top results.
And most important I still ride my 1940 Indian!!
