- 15 roma tomatoes, diced or 1275.72 g canned diced tomatoes, drained well
- 78.78 ml green olives, chopped
- 59.14 ml capers, drained well and chopped
- 78.78-118.29 ml artichoke heart, drained well and chopped
- 5 garlic cloves, minced
- 103.53-118.32 ml olive oil
- 29.57 ml balsamic vinegar
- 73.94 ml fresh basil, chopped
- 6.16 ml kosher salt
- 3.69-4.92 ml fresh cracked pepper
- 59.14-78.78 ml grated parmesan cheese
directions
- In a large bowl combine garlic, vinegar, salt, pepper and basil. Mix well.
- Add the olive oil and mix well again.
- Add the tomatoes and blend all ingredients
- Add the parmesan cheese. Taste for salt, make flavor adjustments.
- Spoon onto Melba Toast and enjoy.
