New Orleans Fruitcake

• Cook Time: 1 hrs

Ingredients:

Yield: 2 loaves

• 2 cups sugar
• 4 eggs
• 2 lbs pecans
• 2 teaspoons vanilla
• 2 cups flour
• 1 teaspoon baking powder
• 1 lb candied pineapple
• 1 lb candied cherry
• 1 lb candied date

Directions:

1. Preheat oven to 350°F.
2. Beat eggs, sugar and vanilla until frothy;
3. Coat fruits with flour mixture (flour and baking powder).
4. Add egg mixture.
5. Line 2 loaf pans with wax paper and dump 1/2 mixture in each pan.
6. Bake in oven for 1 hour.
