Nanna Eatts Lemon Curd Pie

- Crush biscuits quite finely and combine with melted butter. Press into the base of 2 regular pie tins with the back of a spoon; Refrigerate.
- In a large saucepan off of heat, combine lemon, sugar and cornflour.
- Beat in the eggs and gradually add the boiling water, stirring continuously to prevent lumps.
- Stir over LOW-MED to MED heat until thick enough to coat the back of the spoon.
- Add to the biscuit base while hot.
- Refrigerate 4 hours or until set. Do not cover in fridge until it is cool enough or it will sweat.

I am a Uni student; I like to cook in my spare time, I am always on the net and reading books looking for new recipes and thinking of ways to make them my own. I plan to make my own cookbook once I have enough recipes under my belt; im getting there. I will be dedicating it to my Nanna, she has been my number one inspiration for cooking and she has been a great teacher. My favorite things to make are deserts and Chicken dishes. I love experimenting with Pizza's. I had a scare recently, that I may have Coeliac's, luckily I found out this was not the case, but i did happen to learn alot about it in the time that I was waiting for testing, I have come to appreciate gluten and even the lack of it. I came accross some great recipes, and they were quite tasty, I cannot believe how common gluten intolerance is, I had not heard of it until the doctors told me I may have it. I have 3 beautiful babies :P Bella and Basil (my 2 chihuahua's) and Cat (my ginger kitty). My favorite cookbook is Stefanie Alexander's Garden Kitchen Companion. When I am not at Uni or in the Kitchen I like to go shopping, down the beach, camping, fishing, and gardening. I love fashion and I would like to buy a sewing machine and start making my own designs. I also enjoy making jewelery from polymer clay, very fun hobby.
